Servings: 1 dozen medium sized cookies

Bake Time: 10 min.

Ingredients:

1 cup Almond meal
½ cup Tiger nut flour
½ cup Dark chocolate chips
2 Tbsp Coarse chopped tiger nuts
2 Tbsp Chia seeds
2 Tbsp Manuka Honey
3 Tbsp Apple butter or unsweetened applesauce
¹/³ cup Coconut oil
¼ cup Coconut flour
1 tsp Good quality vanilla extract
1 tsp Baking powder
1 tsp Unrefined sea salt

Preparation:

1.) Preheat oven to 350 F.
2.) Line baking sheet with parchment paper.
3.) Combine all dry ingredients in large mixing bowl.
4.) In medium mixing bowl, combine Manuka Honey, coconut oil, apple butter and vanilla.
5.) Mix well and add to dry ingredients.
6.) Using clean, bare hands, mix dough incorporating dry into wet ingredients.
7.) Place damp tea towel over dough and refrigerate for an hour.
8.) Remove from refrigerator and form into balls using a tablespoon or larger measure.
9.) Place balls of dough on baking sheet and press down lightly with your fingers.
10.) Bake 10 minutes or until golden.
