Servings: serves 16 people.
Prep Time: 15 min. drain time for potatoes, post-boil.
Cook Time: approximately 60 min.



8 pounds small, red skinned potatoes (the amount I used to serve 16 people), washed and skin on
Water to cover
1 tsp unrefined sea salt
1/4 cup olive oil
2 tsp unrefined sea salt
1 tsp black pepper



1.) Preheat oven to 375°F.
2.) Layer a large baking sheet with parchment paper.
3.) Place potatoes in large pot and add water to cover. Add salt.
4.) Bring potatoes to a boil. When boiling reduce heat and cook until just tender – about 30 minutes for this quantity.
5.) Drain potatoes well by setting in colander for about 15 minutes.
6.) Place potatoes onto prepared baking sheet. Using a potato masher, gently press down on each potato until the skin pops and it compresses into a flat disk. Drizzle with olive oil. Dust with unrefined sea salt and black pepper.
7.) Pop in hot oven and bake for 30 minutes or until potatoes are crispy and golden.
8.) Remove from oven and serve hot.
