Yield: Makes about 2 dozen 1 ½ inch balls
INGREDIENTS
- ¾ cup dried apricots
- ¾ cup pitted dates
- ½ cup sunflower seeds
- ½ cup pumpkin seeds
- 4 plain brown rice cakes (spelt works too)
- 4 tablespoons flax seeds
- ½ cup rolled oats
- 1 cup agave nectar
- ½ cup almond butter, slightly warmed
Roll completed balls in:
- 1/3 cup organic sesame seeds
PREPARATION:
- Place dried fruit and all seeds in the bowl of a food processor. Process until crumbly.
- Add remaining ingredients and process until mixture is of even consistency.
- Using a tablespoon scoop out mixture and shape into balls. Be sure to compact each ball so that the mixture sticks together well.
- Roll each ball in sesame seeds. Set on a platter and cover with plastic food wrap. Place in refrigerator.
If I am striking sugar, do I need to omit the honey or agave?
I plan to make these this week, they look so good! Can anyone tell me how long they keep and if they can be frozen? I am the only one in my family who will eat them so I would love to freeze 2/3 of them.
These sound great as a late night snack or when you come home from work and just want to eat fast. What is are the macros on these balls ?
I made these – used Almond Butter and Tahini – all oatmeal because I didn’t have spelt at the time and they were FABULOUS! My husband and I have found a new favorite go to snack when it’s too close to dinner to spoil it but you just need something to get you through. I’ve been on the road travelling a lot recently and these pack well! I great go to item when stuck in the airport!

My family makes these all the time! We often substitute honey for agave and peanut butter for almond butter. Also I don’t like the rice cakes SO I use another 1/2 cup of oats instead. Tastes wonderful! My 3 year old gobbles them up!
Hi Laura – Yes, you can leave out the almond butter, but to maintain consistency it would be best to replace it with a seed butter. Try something like tahini or sun butter.
Hi Ana – Agave nectar can be substituted with maple syrup or honey. Will taste just as good!
