Ingredients:

2 cups blanched almond meal
2 tbsp coconut flour
1/4 cup each flax and chia seeds
pinch unrefined sea salt
1/2 tsp gluten free baking soda
5 whole organic eggs
1 tbsp raw, organic honey
1 tbsp coconut vinegar (use Apple Cider Vinegar if other not available)

 

Preparation:

1.) Place almond meal, coconut flour, flax and chia seeds, sea salt and baking soda in medium bowl. Combine well.
2.) Place eggs, honey and coconut vinegar in separate medium bowl and beat until combined.
3.) Combine wet and dry ingredients. Don’t overmix.
4.) Pour into prepared, greased loaf pan.
5.) Bake at 350 degrees F for 35 minutes.
6.) Cool and serve. Store remaining in fridge.
 

Benefits of Paleo Loaf:

Paleo loaf offers the mouth feel of bread without the ill effects of gluten since the flour that is used is sourced from almonds. Of course the loaf is loaded with other nutrients including protein both from eggs and almonds, as well as the probiotic benefits of the vinegar. What is decidedly not present is sugar and processed ingredients.
Add a sweet note by topping with apple butter or a savoury one by topping with sliced avocado and a light dusting of unrefined sea salt.
