This Nut Free Paleo Loaf is an updated version of my gluten-free, grain-free Paleo Loaf for those with allergies.

Prep Time: 10 min.
Bake Time: 60 min.
Yield: 1 loaf.

Ingredients:

2 tbsp coconut flour
1 cup quinoa flour
1 cup chickpea flour
1 tbsp ground cinnamon
½ tsp each fennel, fenugreek and star anise ground fine
1 tsp ground nutmeg
¼ cup coarsely ground flaxseed
½ tsp baking soda
4 tbsp chia seeds
8 eggs well beaten (no less)
1 tbsp molasses
1 tbsp apple cider vinegar
½ cup honey
½ cup each grated carrot and apple
1 cup grated zucchini
Optional: ½ cup raisins or dried cranberries

 

Preparation:

1.) Place all in food processor.
2.) Whiz until uniform. Batter will be of medium consistency so you can pour into the loaf pan, but not runny or thick.
3.) Pour into prepared loaf pan.
4.) Bake in preheated 350 degree F oven for 60 minutes or until done.
