Ingredients:

4 cups fresh arugula leaves
2 cups fresh watercress leaves
1 cup parsley leaves
1 tbsp grainy Dijon mustard
1 tbsp apple cider vinegar
5 tbsp avocado oil
1 avocado, sliced thin
4 fresh figs, chopped
2 cloves minced garlic
1 tsp unrefined sea salt and black pepper (each)
4 scallions, trimmed and chopped thin

 

Preparation:

1.) Wash, drain and dry all greens.
2.) Place in decorative serving bowl.
3.) Arrange fig and avodado on top.
4.) Make salad dressing by combining mustard, ACV, avocado oil, garlic, salt and pepper in large Mason jar. Shake well.
5.) Pour over salad or serve on the side.
6.) Use scallions as garnish.
7.) Boost protein power by sprinkling with 1/2 cup hemp seeds.
