This quick and easy Date Paste is a bonus #StrikeSugarChallenge recipe. Use it in my Avocado Chocolate Nut Butter Pudding, spread a thin layer on slice of Paleo Loaf or mix in with your Greek Yogurt.

Prep Time: Soak dates over night or for two nights, in refrigerator.
Yield: 6 servings.

Ingredients:

1 pound Medjool dates

 

Preparation:

To soak dates:
1.) Soak in water, in refrigerator, overnight or for 2 nights. Make sure the dates are completely covered with water with a good inch or two on top. The dates will soak up all the water.
NB: You can expedite the soaking process by boiling the dates for 4 minutes then simmering for another five.
To make paste:
1.) Remove dates from fridge.
2.) Remove all pits from dates and discard pits.
3.) Place pitted dates in your high speed blender.
4.) Add 2 – 4 tbsps water.
5.) Blend at high speed until a uniformly smooth paste results.
6.) Store in airtight glass jar like Mason jar, and refrigerate. Or freeze.
