1/2 lb pancetta cubed
1 Tbsp organic butter
1 Tbsp olive oil
6 cloves garlic chopped
2 onions sliced
8 cups brussel sprouts, trimmed and halved
1 cup white wine



1.) In a large skillet, cook pancetta till brown on medium heat. Drain fat. Set pancetta aside in a bowl.
2.) In the same skillet, add olive oil, butter, chopped onions and garlic. Cook on medium heat until onions are well cooked and soft.
3.) Add brussels sprouts and white wine to the pan. Cover and let simmer for approximately 10 mins or until brussels sprouts are tender, but still bright green.
4.) Add pancetta back to the pan and season with black pepper. Serve.
