Yield: 4 pounds cooked meat.
Servings: 5-8 x 4-6 ounce servings.
Prep Time: 1 hour to bring meat to room temperature; 5 minute ingredient preparation.
Cook Time: 40 minutes + 10 minutes rest time.



8 pound, whole beef or bison tenderloin (this is what I needed to serve 16 people)
1 head peeled garlic cloves, left whole
4 tbsp olive oil
Zesty Coffee Spice Rub* (recipe follows)


Ingredients for Zesty Coffee Spice Rub:

2 tbsp fine ground coffee beans
2 tbsp fresh ground black pepper
2 ½ tsp unrefined coarse sea salt
¼ tsp garlic powder
pinch cayenne pepper


Preparation for Spice Rub:

1.) Combine all ingredients in small glass Mason jar with screw top lid.


Preparation for Beef Tenderloin:

1.) Preheat oven to 400°F.
2.) Prepare roasting pan by coating lightly with olive oil. Bring meat to room temperature, one hour before cooking.
3.) Make several small slits in meat and insert garlic cloves in slits. (Tuck thin flap of tenderloin, if there is one, under so it won’t cook too fast.)
4.) Give the meat a good massage with Zesty Coffee Spice Rub.
5.) Place meat in hot oven and roast for 40 minutes. NB: Using a digital thermometer helps to control the cooking process. For medium rare cook meat to 140°F, or medium, cook to 160°F.
6.) To serve, remove meat from oven and let stand for 10 minutes, covered. Meat will increase in temperature by at least 10°F while resting. When ready to serve, slice thin and serve hot with sides as suggested.
