This quick and easy Avocado Chocolate Nut Butter Pudding is a bonus #StrikeSugarChallenge recipe for the chocolate lovers craving a treat. No refined sugars here!
Prep Time: 15 min.
Yield: 6 servings.
Ingredients:
2 large, ripe avocados – peeled, pitted, and cubed
1/2 cup unsweetened dark cocoa powder
1/3 cup coconut milk
½ cup natural nut butter
2 teaspoons vanilla extract
1 pinch ground cinnamon
2 – 4 tbsp Date Paste
Flaky sea salt like Maldon for garnish
Preparation:
1.) Place all ingredients, except salt, in high speed blender.
2.) Pulse until uniform mixture results.
3.) Add more coconut milk if necessary to obtain desired consistency.
4.) Divide mixture between 6 dessert dishes or you can use a martini glass. Top with plain Greek yogurt and sea salt if desired.
Where is the coconut whip recipe. I’ve made this again and again and OMG it is heavenly. I think it is best with peanut butter vs almond butter but that is my opinion. You have to make this once in your eat clean lifetime.

Whipped Coconut Cream
Ingredients:
1 (13-ounce) can full fat, coconut milk without guar gum
1 tablespoon honey
1 teaspoon vanilla extract
1 Tbsp maple syrup
pinch USS
Instructions
Place the can of coconut milk upside down, in the refrigerator at least 24 hours before making the whipped cream, so it is well chilled
Chill a metal bowl in the freezer for 15 minutes
Take the coconut milk out of the refrigerator and remove the bottom lid. Pour out liquid coconut water and reserve.
Gently scoop out the coconut fat, placing it in the chilled bowl.
Using a hand blender , whip the coconut milk fat until light and fluffy, about 1 minute
Whip in the honey, vanilla extract, maple syrup, and salt
Use right away or store in a glass jar in the refrigerator for up to 24 hrs.
