Servings: 4-6
Cook Time: 8.5 hrs

Ingredients:

Chicken Breasts or Thighs (Boneless, Skinless)
1 large or 2 small Zucchini (coarse chopped)
1 Green Bell Pepper (coarse chopped)
Handful Baby Carrots (course chopped)
1/2 Onion (chopped)
1 Tbsp Minced Garlic
1 packet Taco Seasoning (Low Sodium preferred)
1 can Yellow or White Hominy (undrained)
1/4 cup Nellie’s Tomato Salsa (spicy)

Preparation:

1.) Spray slow cooker/crock pot.
2.) Cut chicken into very large chunks or medium strips.
3.) Toss 1/2 Taco Seasoning packet with chicken in the cooker.
4.) In large bowl, toss remaining ingredients. Add to cooker.
5.) Cook on low for 8.5 hours.
